The Star Recipe from the Ride des Femmes CHALLENGE – Here It Is!
The first time I made this recipe was during a spring in France back in 2015. I still remember how much my teammate loved it!
Since it uses a lot of spices, I prepared a little blend I simply called “chai spices.” That way, it’s easy to make this recipe over and over again!
With fall just around the corner, this recipe will warm your soul as the temperatures drop.
Ingrédients
1/2 cup raw, unsalted almonds
1/2 cup unsweetened coconut flakes
1 cup pitted Medjool dates
1 tbsp coconut oil
1/2 tsp vanilla extract
1/4 cup almond butter (or 1/4 cup more almonds)
Spice mix:
1 tsp cinnamon
1 tsp ginger
1/2 tsp black pepper
1/4 tsp cloves
1/4 tsp allspice
1/2 tsp fine sea salt
Topping:
2–3 tbsp coconut flakes
Instructions
Toast the almonds in the oven for 15 minutes at 300°F. Let cool.
Place the dates in a bowl and add a little boiling water to soften for 5 minutes. Once softened, drain and blend with a hand mixer.
In a food processor, grind the cooled almonds.
Add the remaining ingredients and blend until a smooth paste forms.
In a skillet over medium heat, toast 2–3 tbsp of coconut flakes for a few minutes until golden. Stir often and be careful not to burn them!
Shape the mixture into balls and roll them in the toasted coconut.
Pro tip: Double the recipe and keep them in the freezer. Just grab one before your ride — it’ll thaw perfectly in your pocket.
